Layered Potato Casserole

  • 1 1/2 pounds ground beef
  • 4 potatoes
  • 4 raw carrots
  • 1 small onion chopped
  • 1 can cream mushroom soup plus 1/2 can milk


  • Spray your casserole dish with a vegetable spray. Then place a layer of the raw ground beef on the bottom of the casserole. Then a layer of sliced carrots, sprinkle some chopped onion on the carrots, then a layer of sliced raw potatoes. Salt and pepper each layer. keep repeating until the casserole is about an inch from the top.
  • Pour 1 can cream of mushroom soup and 1/2 a can of milk over the top of it all.
  • Bake at 350° until the vegetables are soft when poked with a fork, about 1 hour.


This is very good served with corn muffins, or corn bread.
