Macaroni Salad

  • 2 1/2 cups macaroni
  • 3 teaspoons salt
  • 1 tablespoon oil
  • 1 cup shredded cheese of your choice
  • 2 cups salad dressing, any brand, but not Mayo
  • 2 tablespoons mustard
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 cup milk

Boil Macaroni

  • Bring about 6 cups water, with 3 teaspoons salt, and 1 tablespoon oil to a rolling boil, make sure the kettle you use has boiling room. Add 2 1/2 cups macaroni, I prefer the small macaroni, but any will work. After you put the macaroni, into the water stir for a few seconds, then let come to a full boil again, then stir good, and turn the burner to simmer, and cook until if you take one out of the water it will easily degrade when you squeeze it between your fingers. Then drain the water off, do not over drain it or it will be dry.

Mix For In Macaroni

  • In a bowl mix 2 cups salad dressing, any brand, but not Mayo with the 2 tablespoons mustard, 1/4 cup sugar, 1/2 teaspoon salt, a 1/4 teaspoon pepper, and about 1/8 cup milk. Pour over macaroni.
  • Add 1 cup shredded cheese, your choice, I like to use a mild to medium cheddar and mix.
  • You may also add salad shrimp, or tuna if you like.
  • Keep in refrigerator until you serve.

Tip** Buying Kraft Macaroni and Cheese or the store brand, is a good way to get the macaroni for the salad. Then you can keep the cheese packets to add to things like scalloped potatoes or for a cheese sauce for vegetables.
